ASTA Color Value Guide for Paprika Buyers¶
What is ASTA?¶
ASTA stands for the American Spice Trade Association. The ASTA color value (Method 20.1) measures the concentration of red carotenoid pigments (capsanthin and capsorubin) in paprika using spectrophotometry. It is the single most important quality parameter determining paprika's commercial value.
How ASTA is Measured¶
- Extract pigments with acetone
- Measure absorbance at 460 nm
- Calculate ASTA value = (Absorbance × 16.4 × I) / (Sample weight in grams × 1,000)

What is a good ASTA value for paprika?¶
A good ASTA value depends on the application: for oleoresin extraction and food coloring, ASTA 180+ (premium) is ideal; for meat processing, ASTA 140–180 (superior) is standard; for general seasoning blends, ASTA 100–140 (standard) provides good value. Higher ASTA means more color per kg, so premium grades can be cost-effective despite higher per-kg pricing.
What is the highest ASTA paprika available?¶
The highest commercially available ASTA paprika comes from Xinjiang, China, where plate-type pepper varieties can reach ASTA 220+. These ultra-premium grades are typically used for oleoresin extraction. By comparison, standard commercial grades range from ASTA 80 to 220. Spanish La Vera paprika typically measures ASTA 150–200, and Indian byadgi varieties reach ASTA 80–140.
Does higher ASTA always mean better quality?¶
Higher ASTA means higher pigment concentration, which is the primary quality metric for color applications. However, "better" depends on the application: for a spice blend that needs balanced flavor, a moderate ASTA grade with good aroma may be preferable to a high-ASTA powder with less flavor. Processing quality (particle consistency, absence of defects, food safety) matters regardless of ASTA level. Always evaluate ASTA in context of your specific application.
