When is paprika harvested in China?¶
Chinese paprika harvest runs August–October, varying by region: Shandong harvests first (August–October), followed by Gansu and Xinjiang (September–October). Xinjiang's harvest timing is the most commercially significant due to its high-ASTA output. Export-quality dried paprika is typically available from October–November, with the best buying window from January to March.
Can I get fresh paprika supply outside of harvest season?¶
Yes — but only from other origins. During the Northern Hemisphere off-season (July–September), Peruvian paprika (harvest April–July) provides the best counter-season supply. Indian Kharif crop (January–April harvested, March–July shipped) also offers overlap. However, counter-season supply is typically 10–15% more expensive than buying from a major origin during its peak harvest window.
Does the season affect paprika quality?¶
Yes. Late-harvest and early-harvest paprika in Xinjiang shows different color characteristics — mid-season harvest (late September) typically produces the highest ASTA values. In India, the Rabi crop (spring harvest) generally achieves higher quality than the Kharif (autumn) crop. Wet weather during harvest season increases mycotoxin risk (aflatoxin), which is particularly relevant for India's monsoon-season Kharif crop.
